Start with an exceptional appetizer such as the red prawns with cardamom, stracciatella, citrus and mint croquettes; or the Mediterranean sea bass with pumpkin, smoked provola cheese, and radicchio. Stand-out rst courses include spaghetti with a tomato and shell sh sauce, bergamot, potatoes, and ’nduja sausage; and Amalfi lemon risotto with sea truffles, asparagus, and buffalo milk yogurt. Among the second courses, both land and sea are represented: coriander-infused duck, blood oranges, and fennel chutney; and blue lobster with celeriac, hazelnuts, and beurre blanc are two of the highlights. The decadent desserts do not disappoint; try the lemon meringue tart with tamarind and wasabi, or the espresso mousse with Sambuco liqueur, tobacco, and licorice. The wine cellar offers over 1200 labels, all curated by top sommelier Rudy Travagli, and the service, under the direction of Luigi Picca who ran the restaurant when it was at its original site in Viterbo is exceptional.
