Rome’s Mercato Centrale may only be a few months old, but the hip market has already become a beloved stomping ground for foodies. The bottega run by chef Marcella Bianchi, called Veg & Veg, specializes exclusively in vegan and vegetarian fare. Besides fruit and green salads, juices, and a soup of the day, you’ll also find a menu dedicated to veggie burgers like the “Donatello,” a patty dressed with burrata cheese, capers, sundried tomatoes, and zucchini basil pesto; the “Popeye” with caramelized onion, lettuce, sunflower seeds, purple cabbage, beets, and vegan mayo; or the “Cicerone,” with artichokes, pecorino cheese, red onion, and four-pepper vegan mayo.
