After over a year of renovations, Hotel Eden has nally re-opened. For gourmands, this means the return of the luxury digs’ superb restaurant, La Terrazza. Located on the top oor of the hotel and boasting a jaw-dropping view of Rome and oor-to-ceiling windows, the renowned eatery is led by Chef Fabio Ciervo. Michelin-starred Ciervo interprets dishes with equal parts sophistication and whimsy, drawing on ne ingredients from culinary traditions all over the world. A particular emphasis is also put on fresh, Mediterranean avors. Says the chef, “My cooking philosophy is inspired by art and innovation, with an aim to create a perfect harmony between exceptional food and a healthy lifestyle.” Ciervo’s approach is embodied in his menu: starters include a warm sea urchin cream with curry and black pepper; scallops served with mango and passion fruit; and Mediterranean squid with broth and ravioli. The list of primi is comprised of spaghetti with pecorino cheese and Madagascan wild black pepper avored with rosebuds; risotto with white asparagus, turmeric, and co ee; and calamarata pasta with tomato essence and Martini-marinated anchovies. Secondi, meanwhile, range from seafood-based o erings like llet of cod with Risina Spello beans and red onion; and crispy red mullet with seaweed tartare and Kalamata olives—to meat dishes like braised beef with asparagus and horseradish; and seared duck breast with rhubarb jelly. The meal concludes with re ned desserts like an emulsion of almonds with a basil and Macademia nut sorbet or yogurt ice cream and organic milk sponge. La Terrazza’s cuisine is accompanied by an impressive wine list, with labels carefully selected to pair with each dish. Have a special occasion to celebrate?
